At Restaurant Urfuglen, we aim to give you a taste of modern Danish cuisine, where our professional chefs continuously and quite naturally develop new menus on the menu.
This means you are sure to experience the seasonal variation right on the plate - both as an á la carte guest and for parties.

Why the name The Primordial Bird?
The primordial bird was formerly a very beautiful and common breeding bird on the central Jutland heathland and was popularly referred to as the "King of the Heath". As the heath was cultivated, the primeval bird's habitats were reduced, and it was declared extinct in Denmark in 2001. Today, the primeval bird still adorns Brandes city weapon and in selected places in the city. We have chosen to use the ancient bird in the hotel's logo and to name the restaurant after it. This is to give the stories of that time an echo when you visit us today.
Organic and locally produced
Hotel Dalgas and Restaurant Urfuglen are owned by Axel Månsson, which is one of Scandinavia's leading producers of organic vegetables and organic eggs. Both at Månsson's farm and at the hotel, the visions of a greener and more sustainable future weigh heavily. That is why we have a strong focus on using both organic and locally produced ingredients in our kitchen. You will find Månsson's products in supermarkets all over the country, or you can pay a visit to Gårdbutikken Månsson, which is located approx. 5 km from Hotel Dalgas.
